Abstract

The production of lipases by Penicillium simplicissimum using solid-state fermentation and soy cake as substrate was investigated. The effects of temperature, cake moisture, and carbon supplementation on lipase production were studied using a two-level experimental plan. Moisture, pH, and lipase activity were followed during fermentation. Statistical analysis of the results was performed to evaluate the effect of the studied variables on the maximum lipase activity. Incubation temperature was the variable that most affected enzyme activity, showing a negative effect. Moisture and carbon supplementation presented a positive effect on activity. It was possible to obtain lipase activity as high as 21 U/g of dry cake in the studied range of process variables.

Biotechnology, a study field currently impacting our society, investigates them genetically modified organisms. The aim of these innovations, among them the apparition of raw matters, base of the new food, is to obtain industrial profit. The launching of these products into the market raises the need and possibility of their patent, not forgetting that the application of food haw will take us to get tranquillity of action. Sciences advance and innovate but they have to be always safeguarded by a regulation that contributes them the security of well doing.

La biotecnología, campo de estudio que actualmente está impactando en nuestra sociedad, investiga los organismos modificados genéticamente. El fin de estas innovaciones, entre ellas la aparición de materias primas, base de los nuevos alimentos, es obtener un beneficio industrial. El lanzamiento de estos productos al mercado, plantea la necesidad y posibilidad de la patentabilidad de los mismos, sin olvidar que la aplicación del Derecho alimentario, nos llevará a conseguir una tranquilidad de actuación. Las ciencias avanzan e innovan, pero siempre tienen que estar salvaguardadas por una reglamentación que les aporte la seguridad del buen hacer.
